HOW TO PREPARE VEGETABLE SOUP
Vegetable soup is common to people from Nigeria. The traditional soup called edikaikong is a special delicacy you wouldn’t want to miss for anything. Vegetable soup is referred to as a standard dish because whatever it is served with, the awesome taste and looks still fits in perfectly.
The meal is a combination of greens (water leaf and ugu (pumpkin). Every recipe used can be gotten from any local market in Nigeria and out. Basically, this meal is very easy to prepare. Before going into how to prepare the meal, here is a list of recipe you need for the food.
- Vegetables(ugu x water leaf)
- Beef/fish/stocked fish/crayfish
- Red oil
- Spice(onion pepper x maggi/salt
- Locust beans (iru)
- Goat meat
- Periwinkles/dried catfish(optional)
If you have all the recipes available, the next step is to start cooking.
First of all, make sure you wash all your necessary ingredients like fish, meat, stock fish, dried fish, crayfish, vegetables/ugu, and more. After washing all these ingredients thoroughly, put them in a separate place respectively for easy identification
After washing your vegetables, slice them into sizes you desire and store in a plate as well. If you are sure everything is in place, simply start preparation process immediately.
Place your beef, fish, stock fish, dried fish, periwinkles, goat meat in a pot. Add a little quantity of water to it and put pot on fire (gas/stove)
Add your spice (a reasonable quantity of onion, maggi and salt) to the pot of meat. And allow the heat cook your pot content.
When your meat is well cooked and ready, drop pot from fire and place another cooking pot or a large fry pan on the fire and add palm oil into it.
Allow oil heat up for a little while. Add some slice of onion and salt into the pot of red oil.
Allow onions heat up for a while, start adding your vegetables. But to start, if you are using ugu, simply start by frying the water leaf to reduce the water content in the leaf. And allow for some minutes.
After your water leaf is properly fried or you are satisfied with the way it is, you can then add your other vegetables like ugu. Stir both properly and leave to boil for a while.
when all the greens begins to have a weakened look, simply add the spiced cook meat fish and other content in the boiled pot of meat to the soup pot. Stir and leave for a while.
After 2-5minutes, add a medium portion of spice (maggi x pepper x Iru x crayfish) to the pot of soup. Leave for another 3-5 minutes.
When you open the pot, the leaves will look really weak and darker. Taste soup to be sure it is spicy enough. If it is not enough, add more maggi and a tiny portion of salt and stir. Leave for 2minutes to heat up. Then your meal is ready to be served.

However, some people might consider the process of preparing this meal quite difficult judging from the looks but it one of the easiest Nigeria traditional soup to make.
The interesting part is that, it can be served with pounded yam, fufu, EBA, wheat, semo, pounded potatoes and more. Some people sometimes use this to eat rice as it is also very delicious.
